Add a pasta sheet, then cover it with a sheet of parchment paper, and so on. Stack them and place them in the fridge for up to 12 hours or overnight, then use them.

When storing in the freezer, it's crucial to arrange the pasta sheets between layers of parchment paper. After stacking them, place in an airtight container or freezer bag and seal. Remember to defrost the pasta before using it to ensure its texture and taste are preserved.

METHOD

  • prepare the dough

    Add flour and eggs to a large bowl, or use a bowl from your stand mixer. If you're using a stand mixer, knead on medium speed. Knead for 15 minutes to get a smooth and elastic dough. Optionally, use your hand to knead into a smooth mixture, but it will take a little longer. Wrap the dough in cling film (or place it in a freezer bag) and refrigerate for one hour or overnight.

  • Lasagna Pasta Sheets

    Dust your working surface with flour. Divide the pasta dough into four parts. Using a pasta machine, roll out the dough into four long strips. Then, cut the strips into the size of your pasta dish. For a 20 cm x 30 cm (8-inch x 12-inch) pasta dish, we will need 12 strips of dough. There's no need to precook this pasta dough, but if you want, you can cook the sheets separately in boiling salted water over medium heat for about 30 seconds.
